4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Food-contact surfaces were observed to be encrusted with soil deposits. Clean equipment, including glass cups in the drink preparation area and at the bar, was stored on unclean surfaces. The rubber bar mat had visible spillage and sticky residue. Additionally, equipment in the preparation area was stored on an unapproved surface—specifically, a thick absorbent cloth-like material—with debris present.
Violation Equipment food-contact surfaces and utensils are not maintained clean to sight and touch. Surfaces used for storing clean equipment are not cleanable and nonabsorbent as required.
Corrective Action: All food-contact surfaces and utensils must be thoroughly cleaned and sanitized to be clean to sight and touch. Discontinue use of absorbent materials for storing clean equipment and replace them with smooth, durable, nonabsorbent, and easily cleanable surfaces. Clean and sanitize all storage areas, including bar mats, and maintain them in a sanitary condition at all times.
