Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed interior of tomato/ onions slicers unclean with accumulation of food residue. Observed interior and exterior of cooking equipment ( egg griddle) unclean with accumulation of food residue. Observed the stand holding the lids with the lids directly stored on it unclean with buildup. CA: All food and non food contact surfaces shall be cleaned regularly and by sight and touch to prevent build up. Discussed with PIC to deep clean main kitchen and all equipment within 72 hours.
