Discussed with person in charge proper cooling methods and to remove or lightly cover lids. Employee removed lids and wrap and placed metal containers vertically on shelves inside walk in cooler

Observation Observed food being cooled using a non-approved method. Multiple containers of food in the walk-in cooler were tightly covered with lids or wrapped in plastic wrap and stacked vertically on the shelves, which can prevent proper heat release during cooling.

Corrective Action Proper cooling methods were discussed with the Person in Charge (PIC). During the inspection, the employee removed the lids and plastic wrap and rearranged the metal containers to allow for better air circulation while cooling in the walk-in cooler.

Violation Food must be cooled using approved methods that allow for proper heat transfer, such as loosely covering or leaving containers uncovered and arranging them to allow adequate air circulation during the cooling process.
