The establishment is using reduced oxygen packaging without an appropriate HACCP plan. I observed that the facility with a VacMaster for vacuum sealing steaks and fish. The steaks are used within three days, while the fish is frozen for more than 24 hours until needed. The facility claimed to have an approved HACCP plan but was unable to provide the documentation of approved plan. Discussed with kitchen manager A food service establishment shall obtain a variance from the Health Authority for packaging time/temperature control for safety food using a reduced oxygen packaging method and must discontinue use until plan is provided.
