Regulation: 511-6-1.03(5)(j) - hair restraints (c)
Observed food handler preparing food without beard guards. CA. Employees preparing or handling food shall use effective and clean, disposable or easily cleanable nets or other hair restraints approved by the Health Authority, worn properly to restrain loose hair including beards and mustaches longer than one half inch.
16A - hot and cold water available; adequate pressure
Regulation: 511-6-1.06(1)(g),(h) - water supply, capacity; pressure (pf)
Observed low water pressure at handwash stations and 3 compartment sink. PIC reported this was due to work being conducted on main water supply lines. CA. Water under pressure shall be provided to all fixtures, equipment, and nonfood equipment that are required.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed accumulation of food debris and dust on oven and vent hood. CA. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed handwash sink in front service area unclean to sight and touch. CA. The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(n) - maintaining premises, free of unnecessary items/litter (c)
Observed empty boxes and trash cans full in area close to back door. CA. The premises shall be free of items that are unnecessary to the operation or maintenance of the establishment, such as litter or equipment that is nonfunctional or no longer used and litter. COS items were removed and place by main trash outdoor storage.
