Regulation: 511-6-1.06(2)(o) - using a handwashing sink- operation & maintenance (pf)
Observed the hand sink blocked by a rolling chest freezer. CA: Advised PIC A handwashing sink shall be maintained so that it is accessible at all times for employee use. COS: PIC relocated the chest freezer
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed 3 tongs stored as clean hanging from the stove in the main kitchen. CA: Advised PIC equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: PIC removed the tongs and placed inside the 3-compartment sink to be washed and sanitized
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed grease accumulation along the floor next to the fryer. CA: Advised PIC physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee personal food items stored mixed in with facility related food items. CA: Advised PIC 1. Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination.
- Lockers or other suitable facilities shall be located in a designated room or area where contamination of food, equipment, utensils, linens and single-service and single-use articles cannot occur. COS: PIC removed all personal items during time of inspection
