Observed four containers of salads tightly covered while actively cooling inside cold wells located on serving line #1 and #2. CA: Food shall be loosely covered, or uncovered if protected from overhead contamination during the cooling period to facilitate heat transfer from the surface of the food. COS: Saran wrap was removed, salad distributed into shallow pans, and relocated into walk-in-freezer.

Observed pre-made salad with chicken cold holding above 41F on front food service buffet line. Discussed storing salads inside cold well instead of on tray on top of cold well and use of ice baths. Also, discussed use of walk in freezer to rapidly cool and cold-hold salads. COS: salads relocated to cold-holding unit.
