Observed brown organic buildup lining the interior back surface of the ice machine in the area where water flows.

Discussed with PIC to discontinue use of the ice and burn/discard; PIC stated a company services the machine every two months, and was advised to contact the company as soon as possible and to thoroughly clean and sanitize the ice machine before reuse.
11A - proper cooling methods used: adequate equipment for temperature control

Observed a pan of fried chicken cooling near the fryer with a measured temperature of 79°F.

- Cooling shall be accomplished in accordance with the time and temperature criteria specified under DPH Rule 511-6-1-.04(6)(d) by using one or more of the following methods depending on the type of food being cooled: (i) Placing the food in shallow pans; Pf (ii) Separating the food into smaller or thinner portions; Pf (iii) Using rapid cooling equipment; Pf (iv) Stirring the food in a container placed in an ice water bath; Pf (v) Using containers that facilitate heat transfer; Pf (vi) Adding ice as an ingredient; Pf or (vii) Other effective methods. PIC stated the chicken was prepared an hour earlier and moved it to the freezer to rapidly continue cooling. Discussed proper cooling methods with PIC.

Observed a large metal pan of soup inside of the walk-in cooler stored directly on floor.

Discussed with PIC to lift large pan of soup at least 6 inches off the floor to avoid contamination.
