Observed a build up old food particles, encrusted food residue and dust on food and non food storage shelves, an accumulation of grease under grill and on sides of deep fryers and on walls and floors under and behind cooking equipment. PIC was advised to clean said areas and send pictures to inspector via email by 3/6/26.

Observed scoop for rice stored in a container of water reading 74 degrees F. Instructed PIC to clean and sanitize the scoop and container. Instructed PIC that utensils must be stored in water that is at least 135 degrees F, and the container must be cleaned frequently.

CA: During pauses in food preparation or dispensing, food preparation and dispensing utensils shall be stored in a container of water if the water is maintained at a temperature of at least 135°F (57°C) and the container is cleaned at a frequency specified under DPH Rule 511-6-1-.05(7)(b)3(vi).

COS: PIC cleaned and sanitized the scoop and container. New container with hot water >135 degrees F placed with sanitized scoop. PIC will be using boiling water going forward to ensure the water is always above 135 degrees F.
