Regulation: 511-6-1.04(1) - safe, unadulterated and honestly presented (p)
Food shall be safe, unadulterated, and honestly presented. Observed four pieces of Tuna for customer service contaminated by one used glove stored directly on top of said food in cold holding drawer in front food prep and service area. COS: PIC voluntarily discarded said food item.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Cleaning of Equipment and Utensils. Equipment, Food-Contact Surfaces, and Utensils. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Observed on e container of raw shrimp being thawed under running water in fruit and vegetable prep sink in kitchen. COS: PIC removed said food items and washed, rinsed and sanitized sink.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Observed a build up old food particles, encrusted food residue and dust on food and non food storage shelves, an accumulation of grease under grill and on sides of deep fryers and on walls and floors under and behind cooking equipment. PIC was advised to clean said areas and send pictures to inspector via email by 3/6/26.
