Regulation: 511-6-1.05(6)(r) - single-service/single-use articles, use limitations (c)
Observed various TCS food items being stored in single-use articles (Tzatziki sauce containers).
CA: Single-service and single-use articles may not be reused.
Discussed with PIC to discard all the single-use articles as they cannot be reused.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(2)(a) - floor, walls, & ceilings, cleanability (c)
Observed a hole in the concrete floor in the kitchen area. CA: Floors, floor coverings, walls, wall coverings, and ceilings shall be designed, constructed, and installed so they are smooth and easily cleanable. Discussed with PIC to fix and patch up the hole as soon as possible.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed food debris and grease accumulation on floor on the left side of the stove and food debris accumulation under all cooking equipment as well as behind the dishwasher.
CA: The physical facilities shall be cleaned as often as necessary to keep them clean and by methods that prevent contamination of food products. Clean the shelf where dry goods are stored. Observed excess food debris accumulation on shelf.
Discussed with PIC to clean the floors under cooking equipment as soon as possible.
