Cleaning of Equipment and Utensils. Equipment, Food-Contact Surfaces, and Utensils. Equipment food-contact surfaces and utensils shall be clean to sight and touch. Observed carbonated beverages being dispensed through beverage tubes and beverage nozzle , where inner food contact surfaces of said tubes and nozzles were observed with a brownish black like substance at the bar. COS : Said tubes were removed washed, rinsed and sanitized. Corrected On-Site. New Violation.
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:
-
Shall be air-dried or used after adequate draining before contact with food; and
-
May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.
Observed multiple food storage containers and trays not being air-dried or adequately drained after cleaning and sanitizing them before using them in contact with food. Said equipment were observed stacked and stored wet on storage shelves in dry food storage and paper goods area. CFSM was advised to educate and train staff on the proper procedure and correct by 12/19/2025
