Observed cooked pasta in the walk in cooler cooked and held for more than 24 hours without proper date marking. CA: Except when packaging food using a reduced oxygen packaging method, refrigerated, ready-to-eat, time/temperature control for safety food prepared and held in a food establishment for more than 24 hours shall be clearly marked to indicate the date or day by which the food shall be consumed on the premises, sold.

Observed small gnats in bar, main kitchen, ware washing and dry storage areas. Person in charge advised to conduct deep cleaning of floors and floor-wall junctures to remove accumulation of debris and residue that attracts pests and increase professional pest control.

Observed plastic pans at the dish racks to be wet and stacked up after washing. CA: Air-Drying Required. After cleaning and sanitizing, equipment and utensils: Shall be air-dried or used after adequate draining before contact with food; and May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.

Observed the inside of the prep top cooler and the walk in cooler shelves to be heavily unclean with excess food build up. Observed the reach in cooler to be unclean. CA: Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues.
