Observed raw cut chicken stored next to raw pork chops in meat reach in cooler. CA:511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii) - Packaged & Unpackaged Food Separation, Packaging, and Segregation (P, C) (c) Packaged and Unpackaged Food - Separation, Packaging, and Segregation.
- Food shall be protected from cross contamination by: (i) Except as specified in paragraph (i)(IV) of this subsection, separating raw animal foods during storage, preparation, holding, and display from: (I) Raw ready-to-eat food including other raw animal food such as fish for sushi or molluscan shellfish, or other raw ready-to-eat food such as fruits and vegetables, P and (II) Cooked ready-to-eat food; and P COS: Raw pork chops were moved to the shelf above raw cut chicken. Advised PIC to refer to storage flyer given by Waffle House.

Observed dishes stored as unclean with debris build up inside storage pans stored under grill. CA: 511-6-1.05(7)(a)1 - Equipment, Food-Contact Surfaces,& Utensils (Pf) (7) Cleaning of Equipment and Utensils. (a) Equipment, Food-Contact Surfaces, and Utensils.
- Equipment food-contact surfaces and utensils shall be clean to sight and touch. Pf. COS- All dishes were moved to dish pit. Advised to increase cleaning frequency.
15C - nonfood-contact surfaces clean

Observed reach in cooler racks unclean with debris build up. Observed shelf under grill under with heavy grease debris build up. Corrective Action: 511-6-1.05(7)(d) - Nonfood-Contact Surfaces (C) (d) Nonfood-Contact Surfaces. Nonfood-contact surfaces of equipment shall be cleaned at a frequency necessary to preclude accumulation of soil residues. COS: Coolers racks and a shelves were cleaned by employee while inspector was onsite. Advised to increase cleaning frequency.
