Observed multiple TCS foods at temperatures above 41F in prep top coolers and cooler under the grill on the line and in the walk in cooler in the main kitchen. See temperature log below. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. COS: Foods that were unable to cool down to 41F below were discarded. PIC discussed with employees that they must keep the coolers closed at all times, when they are not using them. PIC stated that the temperatures of all foods were below 41F around 12pm in their respective coolers. During the duration of the inspection, the temperatures of the foods discarded were checked and they did not make the correct cold holding temperatures. Discussed with PIC to check temperatures every two hours to allow time for cooling, and to possibly place the foods on time.

Observed reach in cooler with damage to handle and loose fitting doors. Informed PIC (repair).
