Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Observed the two cups of sanitizer solution (used to sanitize the probes of thermometers after temping food) at 0ppm quat residual. CA: Quat sanitizer shall be made to the manufacturer's recommended concentration for food contact surfaces. COS: PIC remade the sanitizer solutions to 200ppm quat. Advised to re-train employees on how to make and check the sanitizer solution concentration, for food contact surfaces.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed multiple shelves in the walk-in-cooler with a build-up of organic matter. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. COS: PIC had an employee clean shelves.
