Observed one employee stuff an object in the trash with a gloved hand (the surrounding trash in the receptacle was touching the gloved hand) then proceed to grab wrapped cheese. CA: 1. Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles P and after engaging in other activities that contaminate the hands. P COS: PIC instructed employee to change gloves and wash their hands immediately after doing activities that contaminate the hands (like touching trash).

Observed employee dump raw chicken nuggets into breading area and then proceed to grab handle for cooked food container to place cooked nuggets into the container. CA: 1. Food employees shall clean their hands and exposed portions of their arms immediately before engaging in food preparation including working with exposed food, clean equipment and utensils, and unwrapped single-service and single-use articles P and: When switching between working with raw food and working with ready-to-eat food; P COS: PIC instructed employee to immediately wash his hands and change his gloves. The handles of the cooked food container were wiped with sanitizer solution.

Observed gasket to cooler in drive thru section of facility in disrepair, not allowing an air tight close for cooler. CA: 2. Equipment components such as doors, seals, hinges, fasteners, and kick plates shall be kept intact, tight, and adjusted in accordance with manufacturer's specifications. PIC stated that they have contacted repair company to repair the gasket on the cooler.

Observed under counter reach in cooler in main kitchen maintaining an ambient air temperature of 55.8F. All TCS foods in the cooler were prepped at 1:55pm (cooling due to temperature being checked around 2:40pm, and were transferred from this cooler to the walk in cooler. CA: 1. Equipment shall be maintained in a state of repair and condition that meets the requirements specified under subsections (1) and (2)of this Rule. PIC stated that they have contacted the repair company to fix the temperature of the reach in cooler.
