6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed Walk in cooler cold holding at temperatures above 41F (See temperature log below). CA: Time/Temperature Control for Safety Food, Hot and Cold Holding. Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below COS: All TCS foods were discarded. Any TCS foods that were prepped that day were moved to working coolers. Walk in cooler temperature rose rapidly anytime the door was opened. PIC stated that they will contact someone to repair Walk in Cooler so the temperature can hold more efficiently.
