Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed sausages in a zip lock bag in the reach in cooler labeled with a discard date of 12/23. CA: 1. A food that requires datemarking shall be discarded if it:(i) Exceeds 7 days, not including the time that the product is frozen. PIC discarded sausages.
10D - food properly labeled; original container
Regulation: 511-6-1.04(7)(c) - food labels (pf, c)
Observed sausages in a zip lock bag in the reach in cooler mislabeled "brisket". CA: Except for containers holding food that can be readily and unmistakably recognized, such as dry pasta, working containers holding food or food ingredients that are removed from their original packages for use in the food establishment, such as cooking oils, flour, herbs, potato flakes, salt, spices, and sugar shall be clearly and legibly identified, in English, with the common name of the food. PIC discarded the sausage.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(6)(r) - single-service/single-use articles, use limitations (c)
Observed single service items (aluminum pans and zip lock bags) being washed and reused. CA:1. Single-service and single-use articles may not be reused. PIC discarded single service items.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(4)(b) - designated areas for employee activity, located to prevent contamination of food, equipment, utensils, linens, & single service articles (c)
Observed employee's food stored with the facilities food items. CA: 1. Areas designated for employees to eat, drink, use tobacco products and electronic devices shall be located so that food, equipment, linens, and single-service and single-use articles are protected from contamination. PIC separated employees' foods from the facilities food.
