Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed TCS food (lettuce, tomatoes, turkey, tuna, american cheese) maintained at a temperature above 41 degrees Fahrenheit on the front service line. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below. PIC removed TCS food from service.

Observed meatballs in steam well maintained at a temperature below 135 degrees Fahrenheit. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 135°F (57°C) or above. PIC removed meatballs from service.
