4-1A - food separated and protected
Regulation: 511-6-1.04(4)(c)1(i)(ii)(iii)(v)(vi)(vii)(viii) - packaged & unpackaged food separation, packaging, and segregation (p, c)
Observed raw liquid egg stored above coleslaw, raw shelled eggs above bologna and ready to eat sausage links and raw liquid egg above pancake mix (water based). CA: Ready to eat food must be protected from contamination of raw food by separation of raw and ready to eat foods. COS: PIC moved raw eggs below ready to eat.
6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed the following foods cold holding at temperatures above 41 degrees: eggs on counter, cheese in icebath, pork chops in reach in cooler in front main kitchen area; cajun sauce in reach in cooler or outdoor shed, tartar sauce and butter in reach in cooler dining area. CA: TCS foods must be cold held at 41 degrees F or below. COS: PIC discarded foods, pork chops on ice, and moved TCS food including ranch and butter to another cooler
16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(i) - service sinks, numbers and capacities (c)
Observed mop sink removed from plumbing and stored upside down outside. CA: At least one service must be installed for the purpose of liquid waste. Must be re-installed by March 25, 2026
