OBSERVED SEVERAL ICE CREAM SCOOPS AND STAINLESS STEEL FLAT PANS STORED AS CLEAN IN THE WAREWASHING AREA OF THE MAIN KITCHEN. CA: Equipment food-contact surfaces and utensils shall be clean to sight and touch. COS: PIC PLACED ITEMS AT 3 COMP SINK FOR CLEANING.
6-2 - proper date marking and disposition

OBSERVED HASHBROWNS (03/09-DOUBLE RIC), PIZZA SAUCE (03/07-DOUBLE RIC), SLICED TURKEY (03/10-PT 2 BOTTOM), SLICED HAM (03/10- PT 1 TOP), AND CREAM CHEESE (03/06-WIC) STORED PAST DISCARD DATE. CA: . A food that requires datemarking shall be discarded if it:
(i) Exceeds 7 days, not including the time that the product is frozen; P
(ii) Is in a container or package that does not bear a date or day; P or
(iii) Is inappropriately marked with a date or day that exceeds 7 days . P COS: PIC TOSSED.

OBSERVED NUMEROUS BOXES OF FOODS STORED DIRECTLY ON FLOOR IN THE WALK IN FREEZER. CA: Except as specified in paragraphs 2 and 3 of this subsection, food shall be protected from contamination by storing the food:
(i) In a clean, dry location;
(ii) Where it is not exposed to splash, dust, or other contamination; and
(iii) At least 6 inches (15 cm) above the floor. COS: PIC MOVED BOXES OFF FLOOR.
14B - utensils, equipment and linens: properly stored, dried, handled

OBSERVED MULTIPLE STAINLESS STEEL FLAT PANS AND TWO STAINLESS STEEL BOWLS STACKED WET IN THE WAREWASHING AREA. CA: Equipment and Utensils, Air-Drying Required. After cleaning and sanitizing, equipment and utensils:
-
Shall be air-dried or used after adequate draining before contact with food; and
-
May not be cloth dried except that utensils that have been air-dried may be polished with cloths that are maintained clean and dry.
