6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed the following TCS food cold held above 41 degrees F: ranch and bleu cheese cups, mozzarella sticks, chicken wings and drums in 2 door prep top cooler; pork beef, pepperoni, mozzarella cheese in walk in cooler of dish machine area. CA: TCS foods shall be maintained at 41 degreed F or below. COS: PIC discarded foods in prep cooler and moved walk in cooler foods to a new cooler
4-2B - food-contact surfaces: cleaned & sanitized

Observed old food/residue stuck to food contact surfaces of dough pan lids (in use) stored on prep table, on can opener blade on prep table holder, on several round metal lids stored on shelves, on several sheet pan, metal containers and utensils stored on shelves in dishwashing area of main kitchen. Observed black residue embedded in cutting boards on prep table and prep top coolers of main kitchen. CA: Food contact surfaces shall be clean to sight and touch. Must be corrected within 3 days.

Observed brown residue on lid inside ice bin in bar area and black residue on panel installed inside ice machine in bar area. CA: Food contact surfaces shall be clean to sight and touch. Must be corrected within 3 days

Observed box of excess molded lemons, a box of limes with one extreme molded inside, and block of punctured cheese with mold growing inside package stored in walk in cooler of dish area. CA: Food must be protected from contamination/used before mold growth or discarded. COS:PIC discarded foods
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Observed residue build up on equipment and shelving holding dishes and equipment throughout main kitchen and in coolers, water and food residue buildup on cooler floors in main kitchen. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris. Must be corrected in 30 days.
