Regulation: 511-6-1.05(7)(a)1 - equipment, food-contact surfaces,& utensils (pf)
Observed old food/residue stuck to several clean plates and pans stored on shelf in dishwashing area and/or above prep table in grill prep area, scoop and tongs hanging above prep table of back kitchen, and cups hanging above back table of bar in bar area. CA: Food contact surfaces shall be cleaned to sight and touch. COS: PIC had employee reclean all dishes mentioned above.

Observed excess black residue build up on inside lid of ice bin next to bar area of server alley. CA: Food contact surfaces must be clean to sight and touch COS:PIC cleaned COS: PIC had employee reclean both ice bin lids
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(a) - equipment & utensils, air-drying required (c)
Observed several stacks of plates, pans, bowls wet stacked on shelves in dishwashing area. CA: Equipment and utensils must be properly air dried.
