Observed queso holding on countertop at 41F or below CA: All cold holding TCS food must be maintained at a temperature of 41*F or below. COS: PIC discarded foods
6-1B - proper hot holding temperatures

Observed queso holing in crock at 88F CA: ALL TCS foods shall be held at 135F or above. COS: Queso reheated at 165F
6-1D - time as a public health control: procedures and records

Observed salsa out of temperature control units without a time documentation and written procedures. Advised PIC to provide a written procedure and time documentation of any TCS food items out as time as public health control.
