Observed yellow and red onions not covered in walk in cooler. Food being stored in walk in cooler should be covered to prevent cross contamination. PIC covered yellow and red onions.

Observed no date marking procedure throughout the facility. Marking the date or day of preparation, with a procedure to discard the food on or before the last date or day by which the food must be consumed on premises, sold, or discarded. PIC stated staff would be updated on next business day on dark marking procedures.

Observed live files in kitchen. The presence of insects, rodents, and other pests shall be controlled to minimize their presence. EH educated PIC on ways to prevent pest.

Observed that new wall tiles in kitchen were lifting and not sealed to prevent moisture and mold prevention. Nonfood-contact surfaces shall be free of unnecessary ledges, projections, and crevices, and designed and constructed to allow easy cleaning and to facilitate maintenance. PIC stated tiles would be fix, replaced, and seal by 2/15/2025.

Observed wild turkey feathers in walk in freezer. EH educated PIC on removing items not necessary for the facility. PIC stated feathers would be moved by 1/14/2025, which is when the facility will open for the week.

Observed sliced cheese and ambient temperature at 60 degrees F in prep top cooler. EH discussed issue with PIC and it was determined the prep top cooler was over heating due to location. PIC and EH moved prep top cooler. PIC moved potentially hazardous foods to reach in cooler. PIC stated temperature in prep top cooler would be monitored.

Observed cutting boards not properly cleaned. PIC stated a scraper would be purchased and cutting boards would be cleaned by 6/2/2025.
