Observed coleslaw pan being held in ice bin at 44 degrees Fahrenheit. EH educated PIC on putting coleslaw in shallower pans to allow temperature to stay below 41 degrees Fahrenheit. PIC educated staff and violation was corrected.

Observed buildup of mold/mildew in ice machine. Equipment, such as ice makers, shall be cleaned at a frequency specified by the manufacturer or at a frequency necessary to preclude accumulation of soil or mold. PIC stated ice machine would be cleaned after closing for the day (2/26/2026).

Observed enclosed window near fish prep area in need of sealing coat. Indoor wall construction shall be finished and sealed to provide a smooth, nonabsorbent, easily cleanable surface. PIC stated that wall coating would be complete by 3/12/2026.

Observed to go lids and take out trays stored on floor. Single use items must be stored 6" off floor. Employee relocated items to proper location.

Observed buildup of grease, food, and dirt throughout kitchen (under fryers, walls, floors). PIC stated they had a deep cleaning that is scheduled for July 4th week. EH asked PIC to have kitchen area cleaned by 7/7/2025.
