Observed cardboard being used/reused as shelf and floor liner. Utilize smooth, easily cleanable and durable materials.

Regulation: 511-6-1.05(7)(d) - nonfood-contact surfaces (c)
Observed accumulations of grease, oils, and debris on rear and sides of fryers, and on utility lines to cook line. Correct by 10/2/25.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(d) - cleaning ventilation system, nuisance & discharge prohibition, cleaned in way not to cause contamination or create a public health hazard (c)
Observd accumulations of grease on/in hood filters. Clean at a frequency to prevent accumulations.
