6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed internal thermometers and creamers at 50 degrees and 49 degrees F and butter at 47 degrees F in fridges behind counter. C/A - adjust coolers so they can maintain 41 degrees F while cold holding. Also place hot coffee and hot tea in a different cooler without TCS foods in them. Coolers should be able to stay below 41 degrees F even with constant opening and closing. COS - manger moved all TCS food to rear cooler.
