Ready to eat TCS items shall be marked with the date that the item was opened or prepared if kept in the establishment for more than 7 days. Observed multiple items such as fresh mozzarella, lasagna, sliced tomatoes. cooked chicken, and house made aioli that had been prepared more than 24 hours prior and had no date marks on them. PIC either discarded or placed correct dates on all foods.

RTE TCS items kept in the establishment for more than 7 days shall be discarded. Observed a container of fresh mozzarella cheese that had been opened on 8-10 with visible microbial growth. PIC voluntarily discarded the food.
