12A - contamination prevented during food preparation, storage, display
Regulation: 511-6-1.04(4)(u) - food display (p)
Observed that there are apples out on display for consumers to grab-and-go at the lobby food service area, however, the apples are not washed and wrapped and there is no posted verbiage stating to wash before eating; observed that the eggs and breakfast potatoes in the lobby food service area are not protected from consumer contamination by a a shield, display, or other protective means. Code: Except for nuts in shell and produce that is to be peeled or washed prior to consuming, food on display shall be protected from contamination by means of wrapping, displays, or other effective means; food on display shall be protected from consumer contamination by being a distance of 8 feet away or have protective displays/shielding.

Observed that the bathroom hand sink and the handsink, both in the lobby, do not have handwashing signage. Code: A sign or poster notifying employees to wash their hands shall be at all hand sinks.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(1)(a) - materials, general requirements (p, c)
Observed that one of the island food preparation countertop in the upstairs main kitchen is made of unsealed wood. Code: It is written in the code provision for the marked violation, .05(1)(a), that utensils and food-contact surfaces of equipment shall be made of materials that do not allow the migration of deleterious substances or impart colors, odors, or tastes to food and under normal use conditions, and shall be safe, durable, corrosion-resistant, and nonabsorbent. In addition, materials shall be sufficient in weight and thickness to withstand repeated warewashing and shall be finished to have a smooth, easily cleanable surface. Materials shall be resistant to pitting, chipping, crazing, scratching, scoring, distortion and decomposition.
