6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed several TCS items holding a temperature above 41 degrees F in the walk-in cooler as well as the prep top coolers. (see temperatures above.) COS The items were discarded. Code: TCS food that uses cold holding as a control for safety shall be held at 41 F or below.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed the walk in cooler and prep top cooler not holding the correct ambient temperature of 41 degrees F. Code: Equipment shall be maintained in a state of good repair.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed an accumulation of debris on the floors of the main kitchen area, particularly in between fryers and puddles of water in the walk-in cooler, front of the freezer door and near the 3-compartment sink. Code: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
