Base violation: Observed food storage containers stacked while wet. COS removed. Code: food storage containers shall be air-dried or used after adequate draining before contact with food.
14C - single-use/single-service articles: properly stored, used
Regulation: 511-6-1.05(10)(e)1&3 - single-service/single-use items stored 6" off floor in clean, dry location (c)
Observed that the single-use spoons for consumers was stored uncovered, laying on a tray on the outside folding counter attached to the mobile unit. COS. Moved into the unit and stored in use-end down in a container. Code: Single-use utensils shall be stored in a manner that prevents contamination.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Base violation: Observed damage to the wall under the 3 compartment sink; observed minor accumulation under shelves in walk in freezer. Code: All physical facilities shall be maintained in good repair; facility shall be thoroughly cleaned and clean frequency shall be enough to prevent accumulation.

Base violation: Observed jackets hanging on dry storage sheleves. Code: Employee belongings and activites shall be in designated areas that prevent contamination of food and food contact surfaces.
