6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(g) - ready-to-eat time/temperature control for safety food, date marking (pf)
Observed that the facility is putting the date of preparation and discard on some of the items, however, some items are date marked for 8 days and 9 days instead of 7 days; diced tomatoes and tuna salad in prep top on the line date marked for 8 days; bratwursts, black beans, sliced tomatoes in walk-in date marked for 9 days. Chicken wings in prep top on the line date marked with only date. COS. Dates corrected. Code: Opened manufactured TCS food and items prepared and held for more than 24 hours shall be date marked with the day of preparation, the day of discard, or both, but the method of date marking shall remain consistent; shall not be date marked to be held longer than 7 days.

Observed that the door to the downstairs liquor room does not self-closing and is not tight-fitting; observed that the door hinge of the door to the outside storage area had fallen off causing there to be a gap between the door and the door frame. Code: Exterior openings shall be self-closing and tight-fitting or otherwise protected from pest entry.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Observed accumulation of debris under shelves in the exterior storage room. Code: Facility shall be thoroughly cleaned and cleaning frequency shall be enough to prevent accumulation of debris.
