Observed large tossed salad on salad cold bar at 46 deg F and in front reach-in cooler at 44 deg F wrapped in plastic. Cold bar was not open for service at the time of the inspection. Corrective Action: Discussed cooling salads down to 41 deg F before placing in front food service units with PIC. PIC removed plastic and moved to walk-in cooler to properly cool to 41 deg F.

Observed mechanical warewashing machine not filling properly on machine start up. When running machine, final rinse heads were not sufficiently spraying to make contact with dishes, utensils, etc. for proper sanitization.

Corrective Action: Discussed with PIC. Facility maintenance was aware and attempting to repair at time of the inspection. PIC placed the machine out of use and will call our office to recheck one repaired. Facility will use single-use articles for serving to students until repaired.
