6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Observed multiple containers of refrigerated TCS foods held beyond 7 days. Containers of whipped cream, blue cheese, and pimentos all held beyond 7 days. CA: Ready-to-Eat, Time/Temperature Control for Safety Food, that requires date marking shall be discarded after 7 days. COS: CFSM discarded all expired date marked food items. Employees were educated on proper date marking and disposition procedures.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(5)(d) - cleaning ventilation system, nuisance & discharge prohibition, cleaned in way not to cause contamination or create a public health hazard (c)
Observed overhead ventilation fan with heavy dust and buildup. Fan is directly over clean dish rack and food prep tables. CA: Ventilation systems shall be cleaned and filters changed so they are not a source of contamination by dust, dirt, and other materials. COS: CFSM removed vent fan cover onsite to be properly cleaned and sanitized
