6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Observed mayo sauce cold holding above 41 degrees F. in reach in cooler less than 4 hr. CA: TCS food must be held at minimum 41 degrees F. COS: sauce bottle was moved to freezer to rapidly cool down. Cooler to be repaired or replaced (no other food was in cooler) Cooler to be re-checked by health dept. New cooler re-checked 3/10/26
6-1B - proper hot holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; hot holding (p)
Observed chicken tenders hot holding under heat lamp at 102-116 degrees less than 4 hr. CA: TCS food must hot hold minimum 135 degrees F. COS: pic reheated chicken tenders to 182 degrees F.
2-2B - proper eating, tasting, drinking, or tobacco use
Regulation: 511-6-1.03(5)(k)1&2 - eating, drinking, or using tobacco (c)
Observed food employee drinking out of water bottle. CA: Employees must drink from single use cups with lid and straw in kitchen. COS: pic discarded water bottles.
8-2B - toxic substances properly identified, stored, used
Regulation: 511-6-1.07(6)(g) - chemical sanitizers, criteria (p)
Observed chlorine sanitizer ppm above 200 ppm. CA: Chlorine sanitizer must be maintained at the recommended ppm for food contact surfaces. COS: pic remade and tested 50-100 ppm
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(2)(a) - equipment and utensils, constructed of durable materials (c)
observed unapproved, not cleanable containers used for storing tortillas. CA: Food storage containers and equipment must be properly designed and used according to the Georgia Food Code. COS: pic will remove all unapproved containers. Health Dept. will re-check
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed cooler gaskets torn and in poor repair. CA: Equipment/gaskets must be maintained in good repair. COS: Health Dept. will re-check cooler gaskets and cooler temperature. Cooler must be serviced. 2/26/26 New cooler ordered to replace non-working cooler. Freezer was cleaned out. New cooler to be checked by health dept.
