Observed ambient temperature measuring devices in reach-in cooler and prep-top cooler reading greater than 41 deg F at the time of the inspection. CA: Discussed proper cold-holding temperatures and monitoring with PIC. The prep-top cooler was empty; however, food items were noted in reach-in cooler. TCS foods in reach-in were found to be in temperature with the exception of TCS sauces prepared on the unit less than 2-hours prior to inspection. All TCS foods were relocated to chest freezer for cold-holding. Discussed importance of adequate ventilation in unit and keeping generator running during unit transportation to maintain proper cooler temperatures. PIC will monitor cooler temperatures and understands foods cannot be stored unless operating at 40 deg F or below. This unit must be rechecked by the Health Department to ensure sufficient ventilation to prevent build-up of heat prior to resuming route.
