Observed cheese date marked for more than 7 days after opening (30 days). CA: TCS food, deli meats and cheese must be date marked once opened/seal is broken for no more than 7 days. COS: pic discarded cheese.
15A - food and nonfood-contact surfaces cleanable, properly designed, constructed, and used
Regulation: 511-6-1.05(6)(a) - good repair & proper adjustment (c)
Observed refrigerator ambient air thermometer reading 50 degrees F. CA: Coolers must be maintained in good repair and must hold tcs foods 41 degrees F or below. COS: Hotdogs and thawing ground beef was moved to another cooler (less than 4 hours-hotdogs were at 43 degrees). Pic will have cooler serviced. Health Dept. will re-check
15B - warewashing facilities: installed, maintained, used; test strips
Regulation: 511-6-1.05(3)(h),(i),(j) - temperature measuring device, manual warewashing; sanitizing solutions, testing device (pf)
Observed no chlorine test strips for bleach used as a sanitizer. CA: Sanitizer test strips must be available for testing approved sanitizer. COS: No correction on site. Health Dept. will re-check.
