16B - plumbing installed; proper backflow devices
Regulation: 511-6-1.06(2)(d) - backflow prevention, air gap (p)
Inspector observed ice bin drain line without a 1" air gap (main level bar). Inspector observed soda machine-ice bin drain line without a 1" air gap (lowest level server station). Corrective Action: An air gap between the water supply inlet and the flood level rim of the plumbing fixture, equipment or nonfood equipment shall be at least twice the diameter of the water supply inlet and may not be less than 1 inch (25 mm).
14B - utensils, equipment and linens: properly stored, dried, handled
Regulation: 511-6-1.05(10)(e)1,2,4 - equipment, utensil, linens, stored 6" off floor in clean, dry location (c)
Inspector observed spoons not stored inverted (Location: server station in the main kitchen, server caddy table at main level bar, and near dish pit in the main kitchen) Inspector observed glassware at the bar not stored inverted. Corrective Action: Cleaned equipment and utensils shall be covered or inverted. COS PIC pulled utensils/glassware for rewash and inverted.
