4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Inspector observed chemical sanitizer not reading at plate level. Corrective Action: Chemical sanitizer needs to read 50-100ppm Chlorine at plate level. COS PIC set up sanitizer in the 3-compartment sink and will use the dish machine only for wash and rinsing until unit can be maintained.
