Inspector observed mold-like growth on interior walls of bulk ice machine. PIC stated it is cleaned quarterly. Corrective action: Food contact surfaces (FCS), such as ice bins, shall be cleaned at a frequency necessary to preclude accumulation of soil or mold.

Inspector observed visible daylight gaps along the side and bottom of back door leading to corridor that leads to exterior, and the outer most door leading to exterior (in the corridor) was propped open. Corrective action: Doors leading to the exterior must be tight-fitting with no visible daylight gaps.

Observed Oppm chlorine detected at the dish machine. Switched to manual sanitizing in 3-compartment sink. Sanitizer level at 3-compartment sink 200ppm Quat. Advised to test sanitizer levels frequently with test strips.

Observed numerous prepped, RTE, cold held, TCS food products without a discard date of 7 days maximum. COS labeled items with a 7day max discard date. (Note: items labeled were made this morning - others discarded.) Advised to always label items with a name and date.

O ppm chlorine detected at dish machine. Owner to contact service company. Switched to manual sanitizing in 3-compartment sink at 200 ppm quat.
