6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Inspector observed large preptop unit not holding TCS foods at 41 degrees F and below. COS: PIC discarded TCS products from the unit. Cold held TCS items will be held in a separate unit until the item is ordered. PIC called the service technician to maintain the unit. CA: Except during preparation, cooking, or cooling, or when time is used as the public health control, time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. Have unit serviced to hold cold TCS product at 41 degrees F and below. Inspector will verify unit has been serviced and will cold hold TCS product at 41 degrees F and below - within 48 hours.
