Inspector observed several faucets leaking throughout the food service area. CA: A plumbing system shall be repaired according to law; and maintained in good repair.
16C - sewage and waste water properly disposed
Regulation: 511-6-1.06(4)(c) - backflow prevention (p)
Inspector did not observe a sufficient air gap at any of the soda machine ice bins (3 soda machines with ice bins: 1 at server station near sushi bar; 1 at each server station in hibachi area). CA: A direct connection may not exist between the sewage system and a drain originating from equipment in which food, portable equipment, or utensils are placed.

Inspector observed raw unsealed wood in the sushi bar area (underside of sushi prep counters). Inspector observed a wooden shelf under sushi prep counter peeling and with dark mold-like spots. CA: Nonfood-contact surfaces of equipment that are exposed to splash, spillage, or other food soiling or that require frequent cleaning shall be constructed of a corrosion-resistant, nonabsorbent, and smooth material.
