Observed no paper towels at memory care hand sinks and activity room hand sink. Advised PIC to provide mounted soap and paper towel dispensers at all hand sink, and replace/repair the kitchen paper towel dispenser.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Observed sani-wipes that require rinsing the surface afterwards in the memory care dining area. Advised PIC to use (ii) Sanitizing solution is sprayed onto the surface and the surface is then wiped clean with a disposable towel. Provide sani-spray for use on food contact surfaces in the main dining area, memory care dining, and activity room.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(m) - mechanical warewashing, sanitization pressure(c)
Observed the high temperature dish machine sanitization rinse at 35 psi (pounds per square inch). The flow pressure of the fresh hot water sanitizing rinse in a warewashing machine, as measured in the water line immediately downstream or upstream from the fresh hot water sanitizing control valve, shall be within the range specified on the machine manufacturer’s data plate and may not be less than 35 kilopascals (5 pounds per square inch) or more than 200 kilopascals (30 pounds per square inch).
