6-1A - proper cold holding temperatures
Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Inspector observed TCS foods being stored at temperatures above 41 degrees F in the outdoor walk-in cooler; see temp log. COS - PIC discarded. Corrective action: TCS foods shall be cold held at 41 degrees F or below.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(7)(b) - food contact surfaces and utensils - cleaning frequency (p, c)
Inspector observed mold-like growth on soda nozzles in main kitchen and bar; potato dicer with build-up of grease and debris. COS - PIC pulled nozzles to be washed, rinsed, and sanitized; PIC stated they will discontinue using current potato dicer. Corrective action: soda nozzles shall be cleaned at a frequency to preclude the accumulation of mold and soil.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Bar dish machine not dispensing sanitizer; 0 ppm Chlorine with test strip at plate level. COS - PIC discontinued use of Bar DM and will wash all dishes in the main kitchen DM. Corrective action: Chemical sanitizing DM shall dispense the sanitizer in the approved range.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Inspector observed accumulations of mold-like growth and soil on the shelves and blower vents of the outdoor walk-in cooler. Corrective action: NFCS shall be cleaned at a frequency to preclude the accumulation of mold and soil.
