11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Inspector observed PIC stating that to thaw wontons, she submerges them in "not cool water." Inspector measured wontons in prep top cooler at 56F. COS-discarded. Corrective Action: time/temperature control for safety food shall be thawed:

Under refrigeration that maintains the food temperature at 41°F (5°C) or less; or
-
Completely submerged under running water:
(i) At a water temperature of 70°F (21°C) or below,
(ii) With sufficient water velocity to agitate and float off loose particles in an overflow, and
(iii) For a period of time that does not allow thawed portions of ready-to-eat food to rise above 41°F (5°C)
17A - toilet facilities: properly constructed, supplied, cleaned
Regulation: 511-6-1.07(2)(l) - toilet rooms, enclosed (c)
Inspector observed restroom doors propped open. COS-closed door. Corrective Action: Except where a toilet room is located outside a food service establishment and does not open directly into the food service establishment, such as a toilet room that is provided by the management of a shopping mall, a toilet room located on the premises shall be completely enclosed and provided with a tight-fitting and self-closing door.

Inspector observed trash can in women's restroom without a cover. Corrective Action: A toilet room used by females shall be provided with a covered receptacle for sanitary napkins.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(f) - drying mops (c)
Inspector observed mop placed in mop bucket. Corrective Action: After use, mops shall be placed in a position that allows them to air-dry without soiling walls, equipment, or supplies.
