Inspector observed dish container in bar hand washing sink. COS-relocated dish. Corrective Action: A handwashing facility may not be used for purposes other than handwashing.
4-2B - food-contact surfaces: cleaned & sanitized
Regulation: 511-6-1.05(6)(n) - manual and mechanical warewashing equipment, chemical sanitization-temperature, ph, concentration, hardness (p,pf)
Inspector observed dish machine producing 0 ppm Cl at 143F. COS- set up 3 compartment sink for wash, rinse, sanitize. Corrective Action: A chemical sanitizer used in a sanitizing solution for a mechanical operation shall be used in accordance with the EPA-registered label use instructions.
6-2 - proper date marking and disposition
Regulation: 511-6-1.04(6)(h) - ready-to-eat time/temperature control for safety food, disposition (p)
Inspector observed multiple refrigerated foods that exceed 7 days. COS-discarded. Corrective Action: A food that requires datemarking shall be discarded if it exceeds 7 days, not including the time that the product is frozen.
11C - approved thawing methods used
Regulation: 511-6-1.04(6)(c) - thawing (c)
Inspector observed reduced oxygen packaged fish (that bears a warning label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment) thawing without removal from the reduced oxygen environment. COS-discarded. Reduced oxygen packaged fish that bears a label indicating that it is to be kept frozen until time of use shall be removed from the reduced oxygen environment prior to its thawing under refrigeration that maintains the food temperature at 41°F (5°C) or less.
17C - physical facilities installed, maintained, and clean
Regulation: 511-6-1.07(5)(a),(b) - good repair, physical facilities maintained; cleaning, frequency & restrictions, cleaned often enough to keep them clean (c)
Inspector observed table in disrepair. Corrective Action: All physical facilities shall be maintained in good repair.
