Milk received at 52F. A limited amount of milk was purchased at a local grocery store. COS- Discarded. Advised PIC to ensure TCS items are purchased and delivered from a commercial distributor and transported in a refrigerated truck.

Observed to go serving bowls used to dispense dry ingredients. Advised PIC to use scoop with handles.

Observed knives being stored between prep cooler and table between uses. Advised PIC to ensure knives are stored on a clean and sanitized surface between uses.
