Regulation: 511-6-1.04(6)(f) - time/temperature control for safety; cold holding (p)
Inspector observed butter on top of the hot holding machine (closest to walk-in cooler) greater than 41 degrees F. CA: time/temperature control for safety food shall be maintained at 41°F (5°C) or below or 135°F (57°C) or above. COS PIC discarded butter.
10D - food properly labeled; original container
Regulation: 511-6-1.04(8)(b) - expired foods (p)
Inspector observed expired skim milk 11.12.25 (Location: front counter reach-in cooler). CA: Milk and time/temperature control safety foods that are labeled as “keep refrigerated” and that are for sale or service to the consumer or used as an ingredient in other foods shall be immediately discarded and shall not be sold, served, or used after the manufacturer’s expiration date or the sell-by date. COS PIC discarded expired milk.
15C - nonfood-contact surfaces clean
Regulation: 511-6-1.05(7)(a)2,3 - equipment, food/nonfood-contact surfaces, and utensils, food-contact surfaces of cooking equipment & nonfood-contact surfaces free of accumulations (c)
Inspector observed NFCS of equipment (coffee machines, cream dispensers, seal at the 3-compartment sink) with buildup of dark slimy mold-like substance. CA: Nonfood-contact surfaces of equipment shall be kept free of an accumulation of dust, dirt, food residue, and other debris.
17D - adequate ventilation and lighting; designated areas used
Regulation: 511-6-1.07(3)(h) - dressing areas and lockers, designated and provided (c)
Multiple employee jackets on top of single service product (Location: adjacent to the drive-thru window). CA: Lockers or other suitable facilities shall be provided and used for the orderly storage of employees' clothing and other possessions. COS PIC relocated employee belongings.
