Observed gyro shank on rotisserie with cooking element in the off position, gyro shank at 80F. Per PIC gyro shank was placed on rotisserie approx. 11am. Observed shaved gyro meat in pan in front of shank at 80F. COS- rotisserie was turn on, and the shaved meat was grill to 181F then placed in the warming unit. Advised PIC once the frozen gyro shank is placed on the rotisserie it shall be continuously cooked and shaved from shank, then grilled on grill top to ensure all parts have been cooked to 155F for 17secs for immediate service or hot held in the Bain-maire at or above 135F.
