511-6-1.04(4)(m) - Wiping Cloths, Use Limitation (C) (m) Wiping Cloths, Use Limitation.

1. Cloths in-use for wiping food spills from tableware and carry-out containers that occur as food is being served shall be:

(i) Maintained dry; and

(ii) Used for no other purpose.

2. Cloths in-use for wiping counters and other equipment surfaces shall be:

(i) Held between uses in a chemical sanitizer solution at a concentration specified under DPH Rule 511-6-1-.05(6)(n); and

Note: Observed dry wiping cloths in sanitizer basins in front food service area that were not in working sanitizer. PIC instructed to remove the cloths and replace with new ones in working sanitizer.

NOTE: Observed an employee apron in HS at time of inspection. PIC removed apron to COS.

1. Post the permit in a location in the food service establishment that is conspicuous to consumers Note: Facilities permit was not posted at the time of inspection PIC informed on appropriate locations to post permit.

(a) “No Smoking” signs or the international “No Smoking” symbol consisting of a pictorial representation of a burning cigarette enclosed in a red circle with a red bar across it may be clearly and conspicuously posted by the owner, operator, manager, or other person in control in every public place and place of employment where smoking is prohibited by this chapter. Note: No smoking poster not posted at time of inspection. PIC informed on appropriate locations to display signage.

511-6-1.06(5)(o),(p) - Using Drain Plugs; Maintaining Refuse Areas (C) (o) Using Drain Plugs. Drains in receptacles and waste handling units for refuse, recyclables, and returnables shall have drain plugs in place. Note: No drainplug was observed in outside garbage receptacle at time of inspection. PIC stated they would request a new one from their waste management company.
